In the Caparaó mountains, at the border of Minas Gerais and Espírito Santo, coffee ripens slowly under a veil of mist. Mirim is a natural micro lot, dried in the whole cherry, the sweetest and most sun kissed expression of Brazil.

Far from the vast mechanized plains that define Brazil's industrial reputation, the Caparaó region reveals another side of the country: a steep mountain terroir where coffee is cultivated on the slopes of a protected national park. It is here, surrounding the Pico da Bandeira, that some of the finest Brazilian micro lots are found.

The high altitude and morning mists, that famous veil enveloping the hillsides, slow down the ripening of the cherries. This precious slowness concentrates sugars and gives birth to coffees of remarkable roundness and sweetness.

The natural process

Mirim is a natural process coffee, the oldest and most demanding method when it comes to drying. The cherry is dried whole, with its pulp and sugar, immediately after harvesting. The bean absorbs the fruit's aromas throughout the drying phase.

The result: a deeply sweet and fruity cup where the coffee gains body, intensity, and complexity. A process that demands constant monitoring, but rewards with an inimitable aromatic signature.

In the cup

Mirim opens with notes of ripe fruit and chocolate, carried by a honeyed sweetness and an enveloping body. Acidity is low, with a long, caramelized finish. A generous, radiant coffee, perfect for those who love round, indulgent cups.
