If there is one region that alone sums up the excellence of Colombian coffee, it is Huila. Nestled in the south of the country, between the Central and Eastern ranges, this department benefits from a rare alignment of conditions: high altitude, fertile volcanic soils, temperate climate, and craftsmanship passed down from generation to generation.

Around Pitalito, the coffee capital of the region, thousands of smallholder farmers cultivate coffee with a consistency and finesse that drive Huila's worldwide reputation. Limon stems from this tradition of high standards.

The washed process

Limon is a washed coffee, the most traditional and precise process in specialty coffee. The cherries are depulped immediately after harvest, the mucilage removed through fermentation and washing, and the beans then dried bare.

This process leaves nothing to chance: it reveals the pure signature of the variety and terroir, without interference from the fruit. The result is a crystalline, crisp, luminous cup, the most honest expression of what nature provided.
