While our micro-lots each tell the story of a farm, a terroir, a discovery, the Signature Blend tells another story: a vision. That of a coffee that doesn't change, that reassures, that anchors itself in daily life without ever compromising on quality.

The art of blending is one of the oldest in coffee. Where a micro-lot depends on a single producer, a single variety, a single moment, a blend allows you to compose a cup — to balance strengths, to smooth out edges, to marry structures. A blend is to coffee what a great blended wine is to the vine: a quest for coherence, harmony, and a unique signature.

Three Origins, Chosen for their Complementarity

Our Signature Blend is based on three major origins, chosen not for their singularity, but for how they interact with each other.

Colombia — the structure

Colombia provides the backbone of the blend. Gentle acidity, medium body, balanced fruity profile: it's the base upon which the entire composition is built. Colombian lands, particularly those of Huila and Cauca, offer an aromatic honesty that makes Colombian coffee the universal companion for great blends.

Brazil — the sweetness

Brazil, the world's largest producer, brings roundness and sweetness. Brazilian varieties — often from the large Bourbon family — deliver a natural sweetness in the cup, with notes of milk chocolate, dried fruits, and roasted hazelnut. It's the emotional binder of the blend, making it warm, accessible, and comforting.

Papua New Guinea — the signature

Papua New Guinea, rarer in the world of great blends, is our signature. Grown in the volcanic highlands of this exceptional island, its coffees offer a singular aromatic complexity — sweet spices, tropical fruits, full body. It's the origin that gives the Signature Blend its depth, its character, that je-ne-sais-quoi that sets it apart from classic blends.

Washed Process — for a Crystalline Expression

The three origins of our Signature Blend are washed — the most traditional and demanding process. The cherries are depulped immediately after harvest, the mucilage is removed in water tanks, and the beans are then dried bare.

This choice is significant. The washed process reveals the true signature of each variety, without fruit interference. It gives the blend an absolute coherence, a clean cup, a clean finish. While a blend mixing washed and natural coffees might seem composite, a 100% washed blend exudes harmony.

In the Cup — the Promise of the Maison

The Signature Blend opens with notes of dark chocolate and dried fruits — roasted hazelnut, sweet almond, raw cocoa. A honeyed sweetness flows through the cup, balanced by a fine, never aggressive acidity. The finish is round, long, persistent, the aromatic signature of a coffee designed to be drunk every day.

It is an exceptionally versatile coffee. As an espresso, it delivers a dense and gourmet expression, ideal for cappuccino or flat white. In filter, it reveals an enveloping roundness, perfect for a morning coffee that neither overwhelms nor bores.

Unlike our micro-lots, which appear and disappear with arrivals, the Signature Blend remains constant. You will find it in store every month of the year, in its recognizable Essabri bag.
